Can you use corn flour instead of plain flour in a souffle?
If you are using a recipe that uses flour as its base, the answer is no you cannot substitute it with corn-flour/starch. You would have to use a recipe that uses corn-flour as the thickener. the preparation is different. Here is an example of a souffle using corn-flour/starch Ingredients: 3 Large Bananas (ripe) 1 Sour Lime Juice 65 gms Sugar 1tbsp Corn flour/starch e tsp Nutmeg 180 ml Milk 3 Eggs, Separated 30 gms Butter 1tsp Vanilla Essence Method: Grease a medium sized souffle dish and sprinkle with some sugar. Peel Bananas and blend along with Lemon juice. Let it become creamy, keep aside. In a pan add Sugar, Corn flour, Nutmeg and Lemon rind. Add milk and cook over a low flame stirring continuously, until it thickens. Remove and keep aside. Beat the Egg Yolks well, add few table spoons of the milk sauce and mix well.
