Kimchee is basically fermented cabbage with other vegatables and spices thrown in. It’s the most common Korean side dish. It goes back to ancient times. Here’s an amusing antidote about kimchee. You might have heard of a US army expression as in “he’s in deep kimchee.” The explanation is that the Koreans used to put their kimchee in deep ceramic dishes out in the fields, some as deep as 6 feet, in order for it to ferment. And you’d be out walking on patrol, step into what looked like a puddle and suddenly you’d be in over your head in fiery fermented cabbage sauce.
