I would put spinach in blended vegetable soups or in tomato based sauces for spaghetti. Spinach and parmesan meatballs is a favourite in our house and my 3 year old loves it. 1 carrot finely chopped, 2 sticks celery finely chopped 1 onion finely chopped 1 tbsp tomato puree 500g minced beef, handful of blanched spinach leaves (put in boiling water for a few seconds- just to soften and wilt. Keep the water you used for this) 1 egg, handful grated parmesan/grana padano cheese, 1 400g tin chopped tomatoes/ passata handful brown breadcrumbs 1 tsp oil For this recipe, I use a deep, frying pan- kind of like a wok. Meatballs- Put beef, egg, parmesan and chopped spinach in a bowl and mix together. Add breadcrumbs until you get a firm mixture. Sauce- Sautee a finely chopped carrot, onion and celery stick in a little oil, add tomato puree. Keep stirring until onion is cooked. Add tin of chopped tomato (if you like texture or passata if not). Simmer. Now start rolling the meat mix into balls ( I m
