Interesting question. Personally I’d say yes, as long as you make it very clear that the reviews in the book are your personal opinion and not the result of many people reviewing the restaurant. In other words, the reader must know that the review is of one person and not the average opinion of a group. There are several books and magazins that publish reviews about restaurants without their knowing and therefore without their permission. The most famous of course is the Michelin guide for fine dining. Everybody wants to earn a star, everybody is happy to be in the book (even a bad review seems to help you if you use it wisely) and nobody knows when they are reviewed, nobody reads the review in advance and nobody has given permission.
