Can you make homemade chicken stock out of raw chicken bones?
Yes you can. There are two primary types of chicken stock, white stock and brown stock. Brown stock is made from chicken bones that are first roasted, and it has a deeper, richer, more complex flavor. White stock starts from bones that have not been roasted, either raw or pulled from cooked chicken, etc. So, decide on the depth of flavor you want, and go from there. If you decide you want to opt for brown stock, you can still start with the raw bones, just roast them first until they are golden and caramelized. Usually, but not always, the aromatic vegetables (carrots, celery, onion, and garlic) are roasted along with the bones for brown stock. If you want white stock, simply skip the roasting and start boiling the bones with the vegetables and herbs (usually thyme, some peppercorns) from their uncooked state. My preference is for brown stock =).
