I don’t have any specific recipes but I’ve got a tried and tested way of making stew. Take a big pot and fill it with a heap of water, garlic and dried beans and lentils – you can usually get a soup/stew mix that will have lentils, barley, split peas, beans etc. Dice some root vegetables (the bland ones) such as swede, parsnip, turnip, potato and stick them in to boil with a few cubes or teaspoons of your favourite stock. You can also add more flavourful vegetables at this stage such as carrot or pumpkin. As the water starts to evaporate add other vegetables (the ones that take less time to cook) such as brocolli or cauliflower. You can add other flavours such as worcesterchire, tabasco, fresh chilli, herbs or stir through some parmesan. Add vegies and flavours according to your taste buds. You’ll end up with a thick, very vegie rich stew! Serve it over brown rice. Tip: To make sure you don’t end up with a soup, don’t add too much water. You can always add more as you go.
