INGREDIENTS: 2 cups cooked chopped leftover roast lamb 1 tablespoon finely chopped onion 2 cups lamb gravy salt and pepper 2 cups mashed potato, prepared with milk and seasonings as desired salt and pepper 1/8 teaspoon paprika 1 tablespoon butter PREPARATION: Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd’s pie is thoroughly heated. Take any recipe you wish for the meat section of the pie – my twist is in the mash. I mash some boiled potatoes and boiled butternut squash with some butter (as much as you want without making the mix too wet) spread over the meat mix and then make sure you get lots of peaks with a fork ( helps to get more crispy crunchy bits MM-MM!) then grate some Parmesan on top (again to own taste) and brown under the grill or in the oven. I also occasionally bake a sweet potato and add this to the mash (without the skin) its best to add it after you have made the original mash with a little less butter – sweet potato can be a little bit on the wet side. If made with beef, it would be known as cottage pie. Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.
