Can you frezze pak choi, and fresh ginger?
Yes and no. Yes you can freeze fresh ginger by itself. Yes you can freeze Pak Choi leaves if they have been blanched first. No it is not recommended that you freeze the lower or white portion of Pak Choi as much like celery there is a structure that is 85% water which will separate the connective components when frozen and become “mush”. If that part is also in a combinded ingredient dish that is frozen it will react the same and the moisture from the Pak Choi will dilute the mixed ingredients.
