The USDA Organic label requires certain procedures to be followed and a chain of ownership of all inputs used to be maintained. This process is very time consuming and fairly difficult to maintain (as we have had to change our record keeping to conform). After keeping records for two years in this manner we have gained a respect for all organic produce.
