Red Velvet Whoopie Pies. Follow the directions for the cake, but leave out the water. I’d wear gloves if you don’t want your hands stained, but roll golf-ball sized balls and put them on a sprayed cookie sheet (better would be a Silpat). Press down just a little on each ball. Bake at 350 degrees F. for about 10 minutes (they should still soft when you touch them, but not gooey. Let them cool, then put two together with a fluffy filling. My filling recipe is too long to put here, but a good substitute is Cool Whip blended with marshmallow fluff. Real whipped cream will break if you try to blend it. However, real whipped cream would also be an adequate filling if you’re serving immediately.
