Can spamers pick up email addresses from false chain emails they send out?

I have noted a major increase in false chain emails. These emails are forwarded to thousands of people with large cc lists. I know of no way to track each forward sending back the emails to a centralized computer. I am asking if there is a way to do this that I am not familiar with.
