Ingredients 1 tbsp vegetable oil 2 3/4 tbsp unsalted butter 1kg braising steak, cut into 4cm cubes 2 onions, finely chopped 3 garlic cloves, finely chopped 1 tbsp tomato purée 2 tsp each ground cumin, ground coriander, sweet paprika and garam masala ½ tsp each ground turmeric, dried chilli flakes and cayenne pepper 1 tsp yellow mustard seeds 20 fresh curry leaves (from Asian grocers) 1/3 cup white wine vinegar 2 cups beef stock, hot 1/2 can chopped tomatoes Method 1. In a large pot, heat half the oil and half the butter over a high heat. When hot, brown the beef in 3 batches for 5 minutes per batch or until browned all over. Remove to a bowl using a slotted spoon. 2.
