Can someone please give me an easy recipe for a coconut cake?
My husband and son love this recipe. You can make it a layer cake or a sheet cake (which is much easier). 1 white cake mix 2 t. coconut extract 1 can Coconut milk 1 large container of whipped topping 1/2 package sweetened flaked coconut Grease and flour 2 – 8 inch round cake pans, line bottoms with parchment paper, grease the parchment paper. Prepare cake mix according to directions, adding extract while mixing. Bake according to package directions. Once layers are baked, remove from oven. Poke holes in both cakes with kitchen utility fork. Shake can of coconut milk well, open and evenly distribute over the top of both cakes. Refrigerate overnight or until all milk is absorbed into cake. Carefully remove one cake from pan and place on cake plate. Cover with about 1/4 of of the whipped topping, sprinkle 1/2 of the flaked coconut over the whipped topping. Carefully remove the other cake from the pan and place on top of first layer.
