A traditional Waldorf consist of diced apple, celery and walnuts with a dressing of mayonnaise with a touch of fresh lemon juice. To substitute sour cream would work if you slightly sweeten the sour cream with a teaspoon of sugar before dressing the salad. The proportions are equal – 2 green or red apples diced; 3 stalks of celery, 1/2 cup walnuts ( roast them first for extra flavor; make a dressing of 1/2 cup sour cream, 1 teaspoon sugar mixed well and blended with salad. Serve chilled. Folks mess around with the original recipe and add raisins, cranberries, and various other dried fruits and nuts. They taste alright, but they can not be called Waldorf salad. It was the magic of the mixture that brought this salad to people’s homes and made it stand for goodness all these years.
