Srinivasa Gopalan, Sainik Puri YES, RUSSIAN salad can be made without egg. Use white sauce in place of mayonnaise to make the salad. The recipe for white sauce is: maida – 100 gms, butter – 100 gms, cloves – 5, milk – 1 ltr, salt to taste, bay leaf 1, onion (small) – 1. Method: Melt butter, add maida and cook for some time on low flame without discolouring and keep it aside to cool. Insert clove inside onion and put it into milk along with bay leaf and bring milk to boil. Remove onion. Add above mixture slowly to the hot milk and keep mixing thoroughly. Cook for another ten minutes and strain. Let it cool. Season. Add cream and put in the vegetable and make a nice vegetable Russian salad.
