Butter is the best to use for a frosting. It tastes much better than shortening. I would not use lard as it has a taste to it and you certainly do not want a “porky” taste to your frosting. Here is a recipe that uses no butter or shortening. It is a very fluffy frosting. White Mountain Frosting 3/4 Cup sugar 1/4 Cup light corn syrup 1/4 Cup water 3 egg whites at room temperature 1 tsp vanilla extract or 1/2 tsp almond extract Mix sugar, corn syrup, and water in a small, heavy sauce pan. Insert a candy thermometer, partially cover pan, and bring to a boil over medium heat. Remove cover and boil with out stirring until temperature reaches 240 to 242 degrees F. or until a drop on the tip of the spoon will spin a 6 to 8 inch thread. Just before syrup reaches the proper temperature begin beating egg whites with an electric mixer until soft peaks form.
