Can i use ground cinnamon instead of cinnamon sticks/bark?
Look at the source site for great information about spices and herbs. In general any whole spice will give a better flavour if ground especially for the dish in question. Ready ground spices are there for convenience, but you should be aware that they will lose their flavour quicker than the whole spice. If your ground spices lose colour or smell then you should really get rid of them and buy fresh – you will be amazed at the difference in colour if you keep the old ones to compare. But dont go by sell by dates – spices will last much longer than those. How long spices will keep probably depends on how well you store them. The idea of keeping them out in glass jars on the work surface is plain daft – they need to be kept in the dark and out of direct heat (hot in the cupboard next to your oven!).
