A cast iron skillet is the only way to make an amazing pineapple upside down cake, in my opinion. Nothing caramelizes better! Just follow whatever recipe you have and make the brown sugar and butter syrupy sauce in the skillet. (I like to add a splash of rum to mine!) Take it off of the heat, arrange the pineapple rings and cherry’s if you desire, and pour the prepared batter in the skillet. Put it in the oven at the temp and time that the recipe calls for. I would make sure to check the cake batter with a toothpick so that you can take it out when it’s done since the recipe may not have the cooking times just exactly right. Good luck!
