I feel it will be fine the liquid content is similar between canned pumpkin and mashed bananas I’d eliminate the pumpkin pie spice and just add cinnamon or maybe apple pie spice I use the same base batter for all my quick bread recipes just adjusting for liquid content and spice blend.
