Certainly most airlines will allow over 14s to travel without an adult some airlines it it 12 & over but to save any disapointment check with your airline when booking and read the small print on your confirmation form Also remember you will need to show at least some photo ID don’t know about passport for spain but again check to save spoiling your day I’m sure there are plenty of places that will accommodate you just don’t turn up all loud & giving it large If your parents could find and book a place in advance all the better or you can do it yourself I’m sure if you ask the question here about where to stay when you’ve decided ireland or spain there will be plenty of young travelers who can advise the most suitable places as well as the costs involved Good luck & enjoy just stay safe
