If you have two single ended transformers, these are running effectively in parallel. It makes no difference whether you are driving them from a phase inverter or not, because the phase on the two (independent) output windings can be changed either way by reversing the leads. This is not going to give you the same operation of either the transformers or the tubes as a true plate to plate transformer. The real plate to plate transformer actually combines the tube power in the flux in the iron, which can never happen in two separate transformers. Hooking two transformers together to combine the output power is always tricky, series or parallel, because if you combine them wrong, there can be large circulating currents, which can kill the transformers. How did you determine the proper phasing on the outputs when you connected them up?
