Can I substitute steel cut oats for whole oat groats?
I have never had groaty pudding but I would not suggest substituting. Whole groats really cook up differently then steel cut. Try a health food store, ask them to order for you, most places will. Yeah I just read the link, this is what groats excel at slow low temp cooking with a lot of liquid, they come out real creamy with a bit of a snap, get the real deal. If you want to make them more healthful wash groats till water runs clear and soak overnight at about 70 degrees in salted water, rinse before adding to the recipe and decrease the liquids a bit.
