You could try sanding the parts where you left the varathane and see what happens when you re-stain, but I’d suggest starting from scratch. Next time try rubbing the wood with mineral spirits, it will show you how evenly the wood will absorb whatever you’re putting on it but will evaporate quickly with no residue.
