Can I split total event charges over two invoices for the client?

Yes, when creating automatic invoices, you can choose to invoice for only a percentage of the total, or for only items of a certain type. See Chapter 6: Finance, Invoices: Invoice Overview, in the EventPro Planner User Manual.
