The stuff about rice giving you food poisoning is true if you do not re-heat it thoroughly and it should be put in the fridge to store as soon as it has cooled down. It would be safe to freeze once the paella is cooked but as another answerer said it would not be as nice heated from the freezer but sometimes I just don’t care about this as it is nice to have home made food ready to go from the freezer – it cannot be any worse than a shop bought microwave meal.
