We put a man on the moon, so yes, you can exchange one Chevy V8 for another. It is possible. The only tricky part to it is to move over the computer stuff from the 2001 without getting confused. This is pretty easy if you keep it all together. If you’re using a wrecked 2001, you must not cut any wire until you’ve figured out what the wire is for. No exceptions. If you follow that rule it’s quite easy. You can even get around that by buying an aftermarket wiring harness that is made to put an LS1 into a generic hot rod. It’s out there. One area where you have to make a decision is the gas tank. The 2001 will have a fuel pump in the tank that delivers pressure for the fuel injection, and the 1980 won’t. You have to decide where you’re going to put your fuel pump on the 80, and how much pressure you need.
