Can I profile with two different SlimKIC Transmitters on separate ovens within close proximity to each at the same time?

Yes, but to avoid signal crossover or interference, if the ovens are too close to be able to position the SlimKIC Receivers far enough apart from each other, currently, you must use one SlimKIC as a data logger and the other as a transmitter. You can use both as Transmitters, if you stagger your profiling so the profiles are not running at the same time and one SlimKIC is turned off while the other is profiling. (see Question 7).
