Can I make meals ahead and then freeze them for eating later?

In fact, this is what I do for my mother. She still lives alone (she’s 91), but doesn’t like to cook a complete meal for herself. My husband and I visit her every two weeks for about a week. While we are there, I do the cooking. We make enough for each meal to have leftovers for one or two individual servings that can be frozen. To save freezer space, we put the amount needed for one serving in a square plastic container and place it in the freezer immediately after cooling. After it has frozen (usually when I am back in the kitchen to prepare the next meal), I pop it out of the plastic container, wrap it in plastic wrap and place it in a ziploc freezer bag. I label and date it so she can go to her freezer self to make a selection when we are not there. This way she has lots of variety and the things she likes to eat. Mom uses her microwave and a small Corning ware dish to reheat the meals. Sometimes she will add a few frozen peas or beans to the dish to round out the meal. A serving o
