You can, but then you will need to check two places in order to get all your mail: your primary account, and your new Central Exchange account. If you prefer not to use Outlook or Entourage, you can configure other email programs to connect to Exchange with an IMAP connection, but you would still have to respond to your calendar invitations in Outlook, Entourage, or the Outlook Web interface (OWA).
