Can I ferment wine in chilly temperatures?
That’s way too cold, the fermentation will either halt or die. And if you try to start your fermentation at that temperature, well, it won’t. You don’t say what country you’re in, but in the US it’s quite unlikely that you live anywhere where it’s illegal to make wine for personal consumption. I’ve never intentionally frozen wine so I’m not sure about the effects, but I can’t think that it would be good, and why would you do it? Properly stored (cool, dark place), decent wine will last for a long time. A few years for white to many years for complex reds. ********* Oops, I just read your profile and now I see why you’re in the woods. You’ll have to find a warmer place. But don’t do it at home, the odor will give you away. If you have access to electricity you can use heaters or electric blankets. Just be careful not to start a fire. And of course someone might notice their bill going up. Too warm and your fermentation will also die. Between 60 and 80 Fahrenheit is about right.
