Everyone is different, so what you can or cannot tolerate may be different from me. Having said that….all non-fiber carbohydrate turns to sugar/glucose when it’s digested. “Complex carbs” are simply several sugars clumped together. These are usually referred to as “starch” and some examples of foods containing them are are potatoes, carrots, whole grains. “Simple carbs” are single sugars that don’t need to be broken down, so are more easily absorbed and used. Simple sugars tend to be higher glycemic because they are absorbed quickly, Complex tend to be lower glycemic because they take longer to be absorbed, bit all are absorbed, so will raise your blood sugar levels. What you eat along with the carbohydrate also makes a difference. If you eat fat or protein along with the carbs they tend to be absorbed slower, especially fat. So if you eat an apple alone vs with an ounce of hard cheese, your blood sugar levels will go up at different rates. The apple alone will usually cause a faster
