As it’s been said, you can open the market, set it to Region-wide in the upper left corner, and then find your mineral or item that you want to buy/sell, and click on it in the left window. The right window will then display a list of prices, which you can sort by price, volume, distance from you, etc. Those are sell orders (other players selling that mineral) and buy orders (players buying that mineral). If nobody’s buying, there won’t be any buy orders, and then you cannot (instantly) sell your mineral. The best you can do is put up a sell order yourself, asking for 500, and hope that someone will be enticed to buy from you. In any case, to take advantage of the best buy price, you have to haul your stuff to the station where the order is, and then sell there. To sell something at the station where you are (for the price that being asked there), you just right-click the item and choose sell.
