Can I allow a single Proxy Controller to give out DHCP or perform OS Provisioning over more than one interface?

Yes. Once the Proxy Controller is configured, select it in the Administration tab, then use the DHCP Configuration and Subnets options to configure DHCP and subnets for the Proxy Controller.
