This carrot is so good I was asked to make it for a wedding cake! You can decorate it with glace icing instead of the traditional cream chees frosting. Carrot Cake: 225g s/r flour 2 tsp baking powder 150g light soft brown sugar 100g grated carrot 2 ripe bananas, mashed 2 eggs 150ml salad or corn oil 50g chopped walnuts or raisins (depends on allergies) Heat oven to 180c. Grease and line 20cm round tin. Sift together flour and baking powder and stir in the sugar. Add the nuts/raisins, carrot and banana and mix lightly. Make a well in the middle, add eggs and oil and beat well until blended. Pour into tin and bake for about 1 and 1/4 hours, until golden brown, shrinking slightly from edges and skewer comes out clean. Turn out and leave to cool on a rack.
