Naan with Minced Meat – Indian Bread Keema Naan or Nan Mamta Gupta In this recipe, Naan is stuffed with lamb or mutton Keema, spiced mince meat. For keema used as a filling, cook it without peas and make it completely dry, without any gravy or liquid. You can use chicken keema or paneer keema. Keema naan makes a meal in itself, served with a raita of choice and pickles. Makes 6-8. Ingredients • For naan: • 3 cups self-raising flour (S-R flour is plain flour ready mixed with raising agents). You can use plain flour, mixed with 1 tsp. baking powder • 1 cup warm (not hot) water • 1 cup warm (not hot) milk • 1 tsp. sugar • 2 tsp. dry yeast (roughly 3/4 tsp. per cup of flour). Make sure it is fresh. Once opened, the leftover yeast will last for only 3 months or so. • 1 tsp. salt • 3 tbs. ‘active’ natural yoghurt (dahi) • 2 1/2-3 tbs. ghee or oil • 2 tbs. poppy/khus-khus seeds or nigella/kalonji seeds (optional) • 2 tbs. flour, for dusting during rolling out • For Keema • 150 gm. mince meat
