Can anyone find a recipe for crepe filling that has cream cheese and chocolate chips?
Cannoli are a traditional Italian pastry, made with a fried crepe that’s filled with cheese (and sometimes chocolate). Cannoli are usually made with mascarpone cheese or ricotta, but it’s not all that different from cream cheese. Here’s one recipe using both cream cheese and ricotta: 2 lbs. of Ricotta 2 (8 oz.) pkgs. cream cheese 1 c. confectioners sugar 2 tsp. cinnamon oil 1 tsp. vanilla 2 oz. of miniature bittersweet chocolate morsels Dash of orange flavoring Beat cream cheese until very creamy. Beat Ricotta vigorously for 2 minutes. Blend the cheeses together and add sugar, cinnamon oil, vanilla and flavoring plus chocolate morsels. In fact, leave out the flavorings (cinnamon oil, orange, and vanilla) and you’ve got the core recipe: ricotta, cream cheese, sugar, and chocolate, beaten. If you don’t have ricotta, substitute more cream cheese.
