Can anyone else spy on the images from the OutdoorCam without me knowing?

The OutdoorCam is a wired camera and does not broadcast any signals. The only way to see the images from the camera is to be physically connected to the cable. While this is theoretically possible it would be very difficult to do and is unlikely to happen without your knowledge.
