Generally, yes. You do have to sacrifice some speed, not to mention the color. Even if the LCD is operating in an “instantaneous” mode, the actual pixels cannot light, and turn off, as fast as a neon or LED display. As far as freezing, we, and most manufacturers have designed that problem away. At least for the average fishermen, anyway.
