Yes, the wings can (and have) snapped. Every plane is different and each plane has a rating for positive and negative g’s (the number times gravity) it can withstand under maximum load. Sometimes these ratings are embedded in other limits like maximum air speed allowed for certain maneuvers etc. The pilot knows these ratings and is expected to stay within them. I used to fly a Cessna 152 Areobat that was rated +10g and -3g. The force will equal gravitational acceleration times mass of the plane and its load. The wings won’t fall off right at the rating … there is a significant safetey margin built in as someone else here suggests. I wouldn’t push it though!
