If you are more particular than that about serving temps, then the ideal temperature of the wine depends upon the type of wine you’re serving. Heavier wines can be served at higher temps. Simple wines, particularly whites, taste better when cold, because their flaws are masked. They tend to grow increasingly insipid as they warm in the glass.
