At what kernel moisture levels can wheat be stored safely?
Because of lack of precision in measurements and variations throughout a grain storage mass, grain kernel moisture levels considered safe for storage are moisture contents and temperatures that support an interstitial air relative humidity of 65% ERH or below. Wheat stored at 13.0% or drier will be close to 65% ERH at 75-80F. As temperature drops, moisture content rises at a specific interstitial air ERH. Wheat at 60F has a moisture content of about 13.2% at 65% ERH. At 30F, wheat would be at about 14.1% moisture at 65% ERH. My recommendation is to store wheat at moisture contents below 13.0% and 60F for long storage.
