Table sugar (sucrose, which is half fructose) has been implicated for a long time as one of our diets baddies. Classic books such as William Duftys Sugar Blues and Weston Prices Nutrition and Physical Degeneration, have disclosed the damage from a traditional observational viewpoint. We can now understand, through modern research and from a biochemical perspective, why sucrose is damaging and identify the exact component that does the most damage in the body, which fructose. Lactose (milk sugar, which is half galactose) has not, to my knowledge, been fingered by traditional scientific observation or investigation; but also contains a similarly toxic molecule, galactose. In the light of modern research we have become ever more precise. We now know the exact molecules that cause the most damage, and at least some the mechanisms of the damage.
