The fume hood’s goal is to safely remove whatever air is currently in the laboratory, and this air is conditioned before it enters the lab. If the fume hood exhaust temperature is ever required, it is typically measured by a temperature sensor in the exhaust ductwork downstream of the fume hood (and not directly inside of the fume hood).
