Kings Cross has escalators only to deep level Underground lines. Canary Wharf has a lift (designed for disabled passengers) as well as escalators. I think you may be able to avoid escalators by taking the Circle Line from Kings Cross (Stairs) to Tower Hill; then the Docklands Light Railway from Tower Gateway next to Tower Hill to Canary Wharf.
