You can make just about any Pinoy dish vegetarian actually. You just need a little bit of creativity. If you’re vegan, there are meat substitutes (glutten) that you can use if you want. Check out the dishes they have in Bodhi. They have vegetarian adobo, asado, barbecue, kare-kare, etc. I also used to buy a lot of of veggie hotdogs and veggie tapa in a store in Tagaytay (Nature’s Originals). If you’re not into meat substitutes, you can cook up a lot of vegetable dishes without meat – laing, chopsuey, pakbet, etc. I particularly love the kare-kareng gulay of Dencio’s. I also have my own version of kare-kareng gulay with bits of beancurd or tokwa.
