In short, no regular cake made without butter or sugar is going to taste good! But if you have to cook to diabetic guidelines, I would take a look at low GI or low GL recipes. They tend to substitute flour for ground almonds, sugar for agave syrup or fructose and butter for an olive based margarine. I’ve tried them out and I have to say they taste alright, but not anything like the real thing. I would take a regular recipe and substitute the sugar for fructose (fruit sugar) but it’s much sweeter than normal sugar so you don’t need to add as much – I’d say about half. I really wouldn’t substitute butter though, margarine tastes horrible. Here is a recipe for Olive Oil Cake by Mark Hix which is really delicious – it’s dense and has a fruity, nutty flavour thanks to the oil. Substitute the sugar for fruit sugar and halve the quantity. 300g caster sugar 3 eggs 300g plain white flour sifted with 1tbsp baking powder Grated zest and juice of 1 orange Grated zest of 1 unwaxed lemon 120ml extra
