ARE TAKING CARE OF KITTENS HARD?
First, both you and your girlfriend need to be prepared for a kitten. So a kitten is not a good gift unless your girlfriend has been seriously preparing to have one. I suggest that if there is going to be a “surprise” part of the gift, that you give her litter boxes, cat toys, food, etc. Let her get her home ready for a cat, and then pick one out together. She should pick out a kitten that is a good fit for her based on its temperment. Although all kittens are energetic and playful to some extent, you should be able to tell which ones will be calmer or crazier by comparing several kittens. Second, the best predictor of whether someone will end up keeping a kitten is whether they have read a book on cat and kitten care. I encourage you and your girlfriend to check one or two out at your local library. Taking care of any living creature can be difficult. To do a good job, you do have to put in quite a bit of effort keeping them fed, sanitary (e.g. litter box maintenance), happy, healthy
