Are Skinny Noodles (Shirataki) good for Type 2 Diabetes?
Konnyaku is very low in carbohydrates and can be safely consumed by diabetics. In addition, when Konnyaku is digested it becomes gelatinous. It “coats” the carbohydrates in the digestive system, and helps to reduce the speed in which glucose enters the blood stream. This decreases blood sugar spikes, and allows for a gradual increase in glucose to relieve stress on the pancreas and to discourage blood sugar abnormalities.
