Are plastic cutting boards better than wood?
I have seen arguments on both sides. A. Synthetic materials such as plastic, acrylic, tempered glass are safe materials for use in foodservice. Wooden cutting boards are safe as long as it is a hard wood, e.g., oak, maple, bamboo. Pine is too soft, can absorb moisture and allow microorganisms to grow – it is not allowed in foodservice. All cutting boards should be washed, rinsed and sanitized properly after use, whether wood or synthetic.
