Hi David, David the former chef here, in North America most of the so called Chinese restaurants have adapted certain types and styles of food to the local market, if you go to a large city like New York, San Francisco and here in Canada, Toronto and Vancouver, you will find more traditional restaurants. Mostly as the blended communitys strive to cook for the non-chinese markets and then there own, Like Dim Sum it is all pretty well what is serve in Hong Kong and China, as most non-chinese are a bit intimidated to try it. I go to the BBQ restauants here in Toronto, and I have been to the Hunan, Cantonese, Shanghiese and Monoglian places here to. All a bit different, if your looking for a more authentic style you may need to experience it in the large centers were the ethnic diversity is bigger.
